Final Sync (P2V)

So i have an issue that maybe can be answered here.  I have always been told that when I do a P2V and I am not ready to turn off the physical system to not do a final sync.  Some of the P2V's can take 3 hours or so to run thru the initial copy.  So the process is. Preform a p2v and then schedule the final sync to happen during the outage window.  Once the final sync is done, power off the physical and then power on the virtual and configure.

 

Now an employee who is always right does it this way.  After the final sync, this person will wait 2 or 3 days before the outage window and then perform another final sync and say that the data that was added between the final sync and the next final sync is copied at this time. 

 

This is completely against what I have known to be true.  It was my understanding that when you do a final sync,  all the bits about the data changing are removed along with the snapshots.  So I guess my question is, does this procedure work.  I didn't think that you could do a final sync and then do another final sync.
